Here's a quick one: (vegan too- Mary)
Eggplant Parmiagiana
Large Eggplant sliced in oblong circles
Italian bread crumbs (salted)
beaten egg or egg substitute
olive oil
Marinara sauce
shredded mozzarella cheese
Take sliced eggplant and dip in egg then coat in bread crumbs and pan fry on each side in olive oil until golden brown, repeat. Set each slice in a glass baking dish and cover each with a dollop of marinara sauce and top with mozzarella cheese and bake at 350 degrees for 30 minutes.
Serve with crusty bread with garlic spread and a green salad and a glass of red wine, Chianti or Rose.
